In the Mauricius kitchen, we seek a balance between simplicity and originality, between respect for ingredients and the joy of creation. With each dish, we try to say something genuine about the place where the food was created or about the people who live there.
We use ingredients from nearby farms, herbs from gardens in the Podbrdy region, mushrooms from the forests just around the corner. We let them stand out; we want the flavors to speak for themselves.

At Mauricius Restaurant, we believe that true flavor begins at the very moment an ingredient is grown, caught, or harvested.
That is why we carefully choose every supplier and place emphasis on the freshness, seasonality, and honest origin of all the ingredients we use.
Our meat comes from trusted farmers, we select fish and seafood from suppliers who share our passion for quality, and we source vegetables from growers who understand their soil as well as we understand cooking.
Where possible, we prefer local and fresh ingredients, and where the character of the dish calls for it, we bring in the finest specialties from around the world.
Every dish is therefore the result of respect for nature, the ingredients, and the people who create them with care.

Every dish begins with a story, and the story of the Mauricius restaurant kitchen begins with Petr Doul. Cooking is not just a job for him, but a lifelong passion that has accompanied him since childhood.
He literally grew up in restaurant kitchens, where his great-grandmother and aunt worked at the time, and where food was cooked honestly and with love – as was customary in the days of the First Republic.
Every dish that Petr prepares bears his signature: respect for tradition, respect for ingredients, and the joy of cooking that brings people together not only in the kitchen.
